My philosophy is 'Honest Fusion'—taking the exceptional seasonal produce grown in our own backyard and the neighbouring Macedon Ranges, and viewing it through a global lens.

At Goona Warra Estate, my cooking is a conversation between the volcanic basalt soil of Sunbury and the vibrant culinary maps of the world. I believe that while our homestead is anchored in Victorian history, our flavours should never be stationary.

Whether it’s pairing local salt-grass lamb with the fermented depths of Japanese miso, or brightening a classic Victorian harvest with the bold, aromatic spices of the Levant, the goal is always balance.
